What smokers do you use?
My main smoker is a 250-gallon reverse flow, offset stick burner. I also use a variety of charcoal smokers and pellet smokers.
Why don't you sauce all of your meats?
I believe barbecue doesn't need sauce. With that being said, I love barbecue sauce and tell my guests to try the meats with sauce. Sauce should accompany the meat and compliment it.
Do you have gluten free options?
All of our meats are gluten free. Many of our sides can be prepared gluten free including our delicious macaroni and cheese!
Do you offer vegetarian options?
If you need a few vegetarian options, please let us know ahead of time and we can accommodate upon your request.
What kind of wood do you use?
Locally sourced oak, maple and cherry.
Are plates and utensils included for catering events?
Yes. Heavy duty plates, cutlery, napkins, toothpicks, and wet naps are included.
How long do you smoke the meats?
Brisket takes around 14 hours, pulled pork around 10 hours, and ribs around 5 hours.
What is a dry rub?
A dry rub is a blend of spices and herbs that are applied to the meat before it is cooked. The rub helps create the "bark" or crust that is on the meat.
How long is the food served for?
The buffet is usually available for 90-minutes. If you need more or less time, we can accommodate you.
Where do you source your pigs for the whole hog barbecue?
The hogs are sourced out of Greene County, NY from local farmers.
When do I need my final guest count?
We will plan your party based on a set number of guests. A final guest count is required 7 days prior to your event to secure all of the necessary meats and supplies.
How far will you travel for an event?
We can travel to a number of surrounding counties, including the Greater Capital District and south through Greene County. Click here for more information on areas served.
